During christmas with our newzealander friends, the family’s grandma cooked us a wonderful Kumara (Sweet Potatoes) cake with orange marmelade and Brandy.

For the glaze :
- ½ cup of Orange Marmalade
- ½ cup of fresh Orange juice
- 2 tspns of grated fresh ginger
- 1 tspn of French mustard
- 15g of butter
- 1 Tbspn of Brandy
Glaze : Combine the marmalade, juice ginger and mustard in a pan, simmer 10min or until slightly reduced. Remove from heat and stir in butter and brandy.
Boil or steam the sweet potatoes for 5min or until partly cooked. Drain, and place in lightly greased shallow oven dish. Top with the glaze and bake uncovered in moderate oven for 30min.
